Umeboshi are salted (preserved) ume, made from Japanese plums of the fruit-bearing Prunus mume tree. This delicacy was first used as medicine 1,500 years ago but gained popularity in the 12th century due to its powerful curative effects. In the 19th century, the extremely sour and salty umeboshi found its way to the Japanese table, and today they’re served as an accompaniment to white rice or an ingredient in rice balls.
